Description

This one comes not from one flower but from dozens: thyme, lavender, rosemary, and whatever grows around the hive that year. It is a wildflower honey, and both its colour and its taste change from one harvest to the next. Two jars from two different summers never quite match.

The honey stays 100% pure, raw and unpasteurised. Its shade runs from pale amber to brown depending on the year’s blooms.

How to enjoy wildflower honey

Its character holds up in a herbal tea, on a mature cheese or in a vinaigrette. It also does the job on toast, which remains its first use.

Store at room temperature, away from light and humidity. Do not give honey to children under 12 months.

Benefits of wildflower honey

This is the household honey, the one that stays open on the table. In Morocco people take it in the morning with bread and tea, and add it to infusions in winter.

What can be measured varies with the harvest, since the floral mix changes every year. What does not change: 320 kcal per 100 g, coming almost entirely from sugars.
